INGREDIENTS:
Chick Pea Flour/Besan- 2 Cups
Milk - 3 Tbsp Plus ½ Cup
Ghee - 2.5-3 Tbsp plus 3/4 Cup
For Sugar syrup
Sugar - 1 Cup
Water 3/4 Cup
Saffron a few strands
Cardamom 4-5 crushed into powder
Preparation:
Take the chick pea flour in a bowl and add 3 Tbsp of milk and 3 Tbsp of ghee to it. Mix well with your hand till it looks like bread crumbs.
Cover the chick pea flour and keep it aside for 15-20 minutes.
After 20 minutes you can pass it through a sieve or grind it in a blender.
Add half ghee from the 3/4 cup in a pan. Add the chick pea flour to the ghee and roast the chick pea flour on a low to medium flame till the chick pea flour gives out a aroma.
Once the chick pea flour is roasted add the milk gradually to the chick pea flour and roast it till the milk is completely evaporated.
Turn off the flame and let the chick pea flour cool down
Now prepare the sugar syrup. Keep a heavy bottomed pan on the stove. Add the sugar and water to the pan. Add the crushed cardamom and saffron to the water . Now cook the sugar till you have one string consistency syrup.
Now add the sugar syrup to the roasted chick pea flour and mix well. If the mixture is still liquid form place the pan on the stove and keep stirring till the mixture solidifies.
Pour this in a greased pan. Garnish it with nuts. Let it cool completely. Cut the Mohanthal as per your choice.
Store it in a airtight container.
