Ingredients
2 Cups Guava Pulp
1 3/4 Cups Sugar
1 1/4Tbsp Butter
1/2 Tbsp Lemon Juice
Pinch of Salt
1 Drop Red Gel Food Colour
Preparation
- Lightly grease a loaf pan / a cookie sheet with oil and keep aside.
- Peel and cut the guavas into half. Place the guavas in a steamer. Steam them for about 10 minutes until they are soft and the seeds begin pop.
- Allow the guavas to cool. Scoop the guava seeds with a spoon and pass the seeds through a sieve.
- Place the guavas in a mixer blender and blend guava till it is pureed.
- Pass the pureed guava through the sieve to make sure there are no seeds or lumps.
- Measure the pulp in cups. You should have 2 cups of pureed guava.
- Place the pulp in a heavy bottom pan on medium heat. Add sugar to the pulp and mix well. Cook the mixture, stirring continuously for 10 minutes. The mixture starts to loosen up as the sugar melts.
- Add the lemon juice after 10 minutes and continue stirring .
- When the mixture gets thicker add the butter and the red colour. Continue stirring and cooking the mixture. After 5 minutes take a little mixture and drop it into a bowl of cold water. If the mixture holds itself without sticking to your fingers then it is done. Now pour the mixture in the greased pan. Let it cool thoroughly for about 2-3 hours or over night.
- Cut the guava cheese in desired shape of squares or diamond.
- Store it in a air tight container.
