NIppattu

 Nippattu is one of the snacks made in Karnataka. These crackers are made with rice flour, roasted gram, groundnut and spices.  These are deep fried in oil. You can shape them round or whatever the shape you prefer.

Ingredients

1/4 cup Roasted peanuts
1/4 cup Roasted Chana Dal
1 cup Rice Flour
1/4 cup Maida/All purpose flour
1/8 cup Rava/Suji
1/2 Tbsp Chilli Flakes
1 Tbsp Sesame Seeds/Til
Hing/ Asafoedita 
10-15 Curry leaves finely chopped
Salt 1 tsp or to taste
1 1/2 Tbsp of hot oil
1/2 - 3/4 cup Water or as required
Oil for deep frying
Plastic paper to roll out the crackers


Method
  • In a blender add the peanuts, curry leaves and the roasted chana dal and pulse them roughly.
  • In a mixing bowl add the rice flour, all purpose flour, suji, sesame seeds, chilli flakes, salt and the ground peanuts, roasted gram and curry.  Mix well.
  • Heat the oil and pour over the well mixed ingredients.
  • Mix everything.  Add water and knead it into a soft dough.
  • Take a plastic sheet. roll out dough or make small balls and roll them into round shape
  • Heat the oil on medium flame and fry the crackers in a batch of 2-3 till they are golden brown
