Healthy Blueberry Muffins

With all the talk of healthy eating I came across a recipe in My Father's Daughter Cookbook for muffins. It is made from spelt flour and the book says that spelt flour does not have any sugar and are vegan, vegetarians can eat these muffins too.


Ingredients

1/2 Cup Vegetable oil
1/2 Cup Soy Milk
1/2 Cup Vermont Maple Syrup/Maple Syrup
1/4 Cup Light Agave Nectar
1 Cup White Spelt Flour
1 Cup Whole Spelt Flour
2 Tsp Baking Powder
1/2 Tsp Fine Salt
2 1/2 Cups Fresh Blueberries

Method

Preheat the oven to 375 degrees F. Line 12 Cup muffin pan with paper cups.

Take 1/4 cup of flour and coat the blueberries in it so that they do not sink to the bottom of the pan.

Mix wet ingredients together, stir in the dry ingredients, and fold in the blueberries.

Divide the dough among the 12 muffin cups and bake until the toothpick comes out clean and the muffins are golden brown, about 25-30 minutes.

Serve hot or at room temperature.
